Pray Tell’s dynamic range of wines is a result of many hours spent at the blending table. We are constantly asking ourselves: “What’s the best wine at the table?” to push the limits of flavor and texture dimensionality and avoid any feeling of being obligated to make the same wine year after year.
A few years ago, we began a series of white wine blends that explored the unconventional. Seeking throughlines across grape varietals that are not traditionally found together. In 2023, we pulled on the common thread shared between Riesling and Viognier. In some ways, it feels like Viognier is almost a caricature of Riesling--with honeyed and floral aromatics and a rich oily viscosity in the glass. By blending those characteristics with equal parts of the bright, sharper edges of cool climate Riesling, we've found a harmonious combination. A touch of skin contact on both makes the shift from honey crisp apple notes on the nose to a slightly more salty and savory palate. Truly a dynamic food pairing white wine or one most enjoyed unpacking every layer in the glass.
